After two years of disability benefits is when insurance contracts typically change the definition of disability from "unable to do your own occupation" to "unable to do any occupation for which you are reasonably suited by education, training, or experience." It is harder to meet that definition.
I wish I could say you will definitely be approved, but I have given up guessing what an insurance company will do. Two missing items from your questions are your age and the type of work you have done in the past. The older you are and the more physically strenuous your jobs, the greater the chance for approval.
It really also depends on what is in your medical record. You list two subjective symptoms, symptoms that don't always show up in an objective lab test, symptoms that are primarily self-reported by you. As you can imagine, insurance companies don't give them the credibility they could or should give them.
If your disability benefits come through a plan from a prior employer, they come under a federal law (ERISA). Should they deny your future benefits, you have, under that law, 180 days to appeal their denial plus a right to get a complete copy of their claim file on you.
Should that happen, I strongly recommend you find an attorney to assist you with the appeal. If you don't have access to HIV related legal assistance, do a browser search for "Contingency ERISA attorneys (name your city or region)". Interview several before deciding as experience and fees, if successful, vary a lot.
I hope for the best for you.
