When does one start to develop the regular symptoms of HIV after the date of infection, i.e. syptoms past the ARS stage. Is five years too conservative, or is this around the average? And what are these symptoms that people develop? J

There is no common symptoms. Average is 5-10 years according to what I have read so far. But only God knows.

You're right. The symptoms really depend on what opportunistic infections you come down with. This can vary tremendously from person to person, so there is no definite pattern in symptoms. HIV itself shouldn't have any symptoms at that point, except for things like swollen lymph nodes. But even that doesn't happen it everyone.
I think the timeframe of between 5-10 years on average is correct as well. But some individuals can go 20 years or more with no problems, and some individuals will develop problems within a year. It's also highly variable.
