I have been ill now for 8 weeks. It started with canker soars in the throat, then stomach problems, lots of loose stools. then fever, night sweets, thrush, now have tingling in hands and feet and headaches. I went and tested a 3 weeks negative, six weeks negative, then the Doc did a quantative PCR and it came back negative a 7 weeks. Is this test reliable. The VL on the test was 400 copes and below would be negative. Thank you for your help!

It is very accurate, not 100% accurate. As you have no doubt seen from the answers on this site, it is not FDA approved for diagnostic purposes because there is a small margin of false negatives and a small (but larger) margin of false positives. The answer is that it is very accurate but not completely accurate.
As for the symptoms - do not underestimate the power of anxiety! Get re-tested at 3 months and try to do things which relax you in the meantime. Chances are that you are fine.
