My bf is on ART and his viral load has been undetectable for many years. But 1 month ago, he stopped all his medication for 2 weeks and he had shingles and cold sores outbreak. A week after our last encounter I came down with fever, muscle ache, sore throat, headache and male genital yeast infection. Could he have infected me? Does the above resemble ARS symptoms?

It's unlikely that his viral load would rebound in such a short amount of time. Also, you don't mention the details of your sexual encounter. Was there penetrative sex? Was a condom used? If he was the penetrative partner, did he ejaculate inside of you?
Was your yeast infection diagnosed by a doctor? Your symptoms while similar to ARS, are too vague to use as a diagnostic tool.
I would go in for a baseline HIV test. If that test is negative, I would suggest a follow-up test at the three month mark, and a final test at the six month mark IF you want to be extra cautious. I only suggest the six month test BECAUSE he is KNOWN to have HIV.
