are HIV meds safe for human consumption for long periods of time ? I am a supporter of drug holidays once blood levels are within the normal range.

HIV medications, properly monitored are indeed safe to be taken for many, many years.
While your hypothesis was once attractive, several independent studies have confirmed that the idea of stopping medications once "levels are within normal range" is indeed a very bad thing to do because of significantly increased risk of complications and (yes, indeed) death. If you want more details, look up the SMART study for their conclusions.
